Instructions

  1. Prepare the Filling: In a medium bowl, combine the cole slaw mix, minced garlic, ground ginger, soy sauce, and a pinch of salt and pepper. Mix well to evenly distribute the seasonings.
  2. Cook the Filling: Cover the bowl with a microwave-safe plate or wrap and microwave the mixture for 3-5 minutes until the vegetables are tender. Drain any excess liquid, then stir the filling to coat it well with the seasonings.
  3. Preheat Oven: Heat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking.
  4. Prepare the Egg Roll Wrappers: Lay one egg roll wrapper on a clean flat surface with a corner pointing towards you, forming a diamond shape.
