Instructions
- Cook ground beef and onion: In a large skillet over medium heat, cook the ground beef until browned. Add diced onions and cook for an additional 5-7 minutes until onions are soft and translucent. Drain excess grease and set aside.
- Prepare soup mixture: In a large bowl, combine cream of mushroom soup, milk, salt, black pepper, onion powder, garlic powder, and Italian seasoning. Stir until the mixture is well combined.
- Layer ingredients in slow cooker: Layer half of the thinly sliced potatoes evenly on the bottom of the crock pot. Add half of the cooked ground beef and onions over the potatoes. Pour half of the soup mixture on top. Then layer half of the sliced carrots and sprinkle with 1 cup of shredded cheddar cheese. Repeat the layering process with the remaining potatoes, ground beef mixture, soup, carrots, and cheese.
- Slow cook the casserole: Cover the crock pot with its lid and cook on High for 4-5 hours or on Low for 7-8 hours, until the potatoes are tender and the cheese is melted and bubbly.
- Rest and serve: Allow the casserole to cool for 10-15 minutes before serving to let it set and make serving easier.
Notes
- Slicing the Potatoes: Make sure all potatoes are sliced evenly, about the same thickness, for even cooking. A mandolin slicer works well for this task.
- Make Ahead: You can assemble the casserole in the crock pot liner, cover, and refrigerate for up to 24 hours before cooking. Add extra cooking time if starting from cold ingredients.
