This Crock Pot Mediterranean Chicken is a flavorful and easy slow-cooked dish combining tender chicken thighs with roasted red peppers, green olives, marinated artichokes, and Mediterranean spices. Perfectly cooked in a crock pot, it pairs wonderfully with fresh spinach and feta cheese for a light, wholesome meal.

Chicken and Mediterranean Mix
- 2.5-3 lb boneless skinless chicken thighs
- 1 cup roasted red peppers, drained and cut into bite-sized pieces if large
- 1/2 cup green olives with pimentos
- 14 oz marinated or canned artichokes
- 3 tbsp lemon juice
- 2 tbsp olive oil
- 2 tsp dried minced garlic
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp pepper
To Serve
- Fresh spinach, about one big handful per person
- Feta cheese, a couple tablespoons per person
Instructions
- Prepare Ingredients: Place the boneless skinless chicken thighs in the crock pot. Add the roasted red peppers, green olives, marinated artichokes, lemon juice, olive oil, dried minced garlic, dried oregano, salt, and pepper on top of the chicken.
- Mix and Cook: Stir the ingredients gently to combine them well. Cover and cook the mixture on low for 4-6 hours or on high for 2-3 hours until the chicken is fully cooked and tender.
- Serve: To serve, place a big handful of fresh spinach into a bowl. Add 1-2 cooked chicken thighs per person (use 2 for adults and 1 for kids) along with some of the cooked artichokes, olives, and other vegetables from the crock pot. Spoon some of the cooking liquid over the dish to help wilt the spinach.
- Add Feta: Sprinkle a couple tablespoons of feta cheese on top of each serving to add a creamy and tangy finish.
Notes
- You can use either canned or marinated artichokes, depending on your preference and availability.
- Adjust salt and pepper to taste before serving.
- If you prefer a thicker sauce, you can remove the lid in the last 30 minutes of cooking to reduce the liquid.
- This dish pairs well with warm pita bread or couscous on the side if desired.
