Description
A festive and easy-to-make Crockpot Christmas Candy recipe featuring layers of roasted peanuts and multiple types of baking chocolates slowly cooked to create smooth, glossy holiday treats, adorned with colorful sprinkles. Perfect for holiday parties and gift-giving.
Ingredients
Scale
Base
- 16 ounces lightly salted roasted peanuts
Chocolate Layers
- 10 ounces 60% cocoa baking chocolate
- 4 ounces 48% cocoa baking chocolate
- 4 ounces white baking chocolate
Topping
- 10 ounces vanilla flavored candy melts
- Holiday sprinkles (red, white, and green), as needed
Instructions
- Layer the ingredients: In a 2.5-quart or larger slow cooker, begin by placing the lightly salted roasted peanuts at the bottom. Then break the 60% cocoa and 48% cocoa baking chocolates into smaller pieces and layer them over the peanuts. Next, add the white baking chocolate pieces, followed by the vanilla flavored candy melts on top.
- Cook in the slow cooker: Cover the slow cooker and set it to LOW. Allow the ingredients to cook undisturbed for 1 hour. After this, gently stir the mixture to combine the peanuts and chocolates evenly. Continue cooking on LOW for an additional 1½ hours, stirring every 30 minutes, until the chocolate mixture is smooth and glossy.
- Cool the mixture: Turn off the slow cooker while keeping the lid on. Let the mixture rest covered for 30 minutes to thicken slightly, making it easier to portion into candies later.
- Prepare the baking sheets: Line two large baking sheets with parchment paper or wax paper to prevent the candies from sticking as they cool and set.
- Portion the candies: Using a tablespoon or a small cookie scoop, drop 2-tablespoon portions of the chocolate and peanut mixture onto the prepared baking sheets. Space each portion about ½ inch apart to avoid sticking together.
- Decorate with sprinkles: While the candies are still wet, generously sprinkle them with red, white, and green holiday sprinkles for festive decoration.
- Set the candies: Place the baking sheets in the refrigerator for at least 1 hour, or until the candies are completely firm and set to the touch.
Notes
- Use a slow cooker of at least 2.5-quart capacity to allow room for stirring.
- Be gentle when stirring after the first hour to ensure the peanuts stay evenly distributed without breaking.
- These candies can be stored in an airtight container in the refrigerator for up to two weeks.
- For a nut-free version, substitute roasted peanuts with roasted seeds such as pumpkin or sunflower seeds.
- Ensure your candy melts are vanilla flavored for the best complementary taste with the dark and white chocolates.
