  • 1 bag (9.75 oz) Nacho Cheese Doritos (slightly crushed)
  • 3 cups cooked chicken (shredded or chopped)
  • 1 can (15 oz) black beans, drained & rinsed
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup salsa
  • 1 cup frozen corn
  • 2 cups shredded cheddar cheese (divided)
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Kosher salt & pepper (to taste)

For Serving/Garnish

  • Chopped fresh cilantro
  • Sliced green onions

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F. Spray a 9×13 inch baking pan with cooking spray and set aside.
  2. Mix Chicken Mixture: In a large bowl, combine the shredded cooked chicken, drained black beans, cream of chicken soup, sour cream, salsa, frozen corn, 1 cup of shredded cheddar cheese, chili powder, cumin, and garlic powder. Stir well to incorporate all ingredients evenly. Season with kosher salt and pepper to taste – if using rotisserie chicken, it might already be seasoned, so taste before adding more.
  3. Layer Doritos Base: Spread half of the slightly crushed Nacho Cheese Doritos evenly on the bottom of the prepared baking dish. Be careful to leave some chip pieces larger for texture.
  4. Add Chicken Mixture: Evenly spread the chicken mixture over the Doritos base in the baking dish.
  5. Top with Remaining Doritos and Cheese: Sprinkle the remaining crushed Doritos over the chicken mixture, then top with the remaining 1 cup of shredded cheddar cheese.
  6. Bake the Casserole: Place the dish in the preheated oven and bake for 25-30 minutes, until the casserole is bubbly, the chips are toasted, and the cheese is fully melted and slightly golden.
  7. Cool and Garnish: Remove from oven and allow the casserole to cool for 3-5 minutes before serving. Garnish with chopped fresh cilantro and/or sliced green onions to add freshness and color.
