- 1 bag (9.75 oz) Nacho Cheese Doritos (slightly crushed)
- 3 cups cooked chicken (shredded or chopped)
- 1 can (15 oz) black beans, drained & rinsed
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- 1 cup salsa
- 1 cup frozen corn
- 2 cups shredded cheddar cheese (divided)
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- Kosher salt & pepper (to taste)
For Serving/Garnish
- Chopped fresh cilantro
- Sliced green onions
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F. Spray a 9×13 inch baking pan with cooking spray and set aside.
- Mix Chicken Mixture: In a large bowl, combine the shredded cooked chicken, drained black beans, cream of chicken soup, sour cream, salsa, frozen corn, 1 cup of shredded cheddar cheese, chili powder, cumin, and garlic powder. Stir well to incorporate all ingredients evenly. Season with kosher salt and pepper to taste – if using rotisserie chicken, it might already be seasoned, so taste before adding more.
- Layer Doritos Base: Spread half of the slightly crushed Nacho Cheese Doritos evenly on the bottom of the prepared baking dish. Be careful to leave some chip pieces larger for texture.
- Add Chicken Mixture: Evenly spread the chicken mixture over the Doritos base in the baking dish.
- Top with Remaining Doritos and Cheese: Sprinkle the remaining crushed Doritos over the chicken mixture, then top with the remaining 1 cup of shredded cheddar cheese.
- Bake the Casserole: Place the dish in the preheated oven and bake for 25-30 minutes, until the casserole is bubbly, the chips are toasted, and the cheese is fully melted and slightly golden.
- Cool and Garnish: Remove from oven and allow the casserole to cool for 3-5 minutes before serving. Garnish with chopped fresh cilantro and/or sliced green onions to add freshness and color.
