Description

This Easter Poke Cake is a colorful and fun dessert, perfect for springtime celebrations. It’s made with a French Vanilla cake mix and topped with creamy pudding and Cool Whip, creating a moist, flavorful treat that’s easy to customize with your favorite decorations.

Cake

      • 1 Betty Crocker French Vanilla Cake Mix
      • 3 Eggs
      • 1 cup Water
      • 1/2 cup Vegetable Oil

Pudding Layer

      • 1 3.4 oz. Box of Jello Instant Vanilla or French Vanilla Pudding
      • 3 cups of Milk

Topping

    • 1 Carton of Cool Whip
    • 1 Box of McCormick Neon Colors Food Coloring (Pink, Purple, and Green)
    • Optional: Easter Sprinkles

Instructions

  1. Prepare the Cake Batter: In a large bowl, combine the French Vanilla Cake Mix, Eggs, Water, and Vegetable Oil. Mix until the batter is smooth.
  2. Divide and Color the Batter: Divide the prepared batter evenly into three separate bowls. Use each of the food coloring options (Pink, Purple, and Green) to create vibrant colors in each bowl.
  3. Create the Marble Effect: Transfer each colored batter into individual Ziploc bags. Cut a small corner of each bag and squeeze the batters alternately into a greased 9×13 pan to create a marbleized look.
  4. Bake the Cake: Bake the marbleized batter in the oven at 350°F for approximately 30 minutes, or until a toothpick inserted into the center comes out clean. Remove the cake from the oven and allow it to cool slightly.
  5. Poke the Cake: Using the back of a wooden spoon, poke holes across the surface of the cake, spacing the holes about every 1 1/2 inches.
  6. Prepare the Pudding Layer: In a separate bowl, beat the Milk and Instant Pudding mix together for about 5 minutes, or until the pudding starts to set.
  7. Add the Pudding Layer: Pour the prepared pudding mixture evenly over the surface of the cake, allowing it to soak into the poked holes.
  8. Add the Topping: Spread an even layer of Cool Whip over the top of the cake. If desired, decorate the cake with your favorite Easter Sprinkles.
