Ingredients

Units Scale

Chicken and Coating

    • 1.5 lbs. boneless skinless chicken breast or precut cutlets
    • 1/2 cup breadcrumbs
    • 1/2 cup parmesan cheese, grated
    • 1 tsp. garlic powder
    • 1 tsp. onion powder
    • 1 tsp. dried oregano
    • 1 tsp. dried basil
    • 1/2 teaspoon smoked paprika
    • Salt and black pepper to taste
    • 2 large eggs, beaten
    • Olive oil spray

Optional Garnish

  • Fresh parsley, chopped

Instructions

  1. Preheat the Air Fryer: Set your air fryer to 400 degrees Fahrenheit to prepare for cooking.
  2. Prepare the Coating Mixture: In a shallow bowl, combine breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried oregano, dried basil, smoked paprika, salt, and black pepper. Mix well to create your coating mixture.
  3. Prep the Chicken Cutlets: Butterfly each chicken breast and cut it in half to create thinner cutlets. Alternatively, use a meat mallet to gently pound them to an even thickness.
  4. Dip Chicken in Egg: Take each chicken cutlet and dip it into the beaten eggs, ensuring that both sides are evenly coated.
  5. Coat in Breadcrumb Mixture: Press each side of the chicken cutlet firmly into the breadcrumb mixture, making sure the coating adheres well.
  6. Set Chicken in Air Fryer Basket: Place the breaded chicken cutlets in a single layer in the air fryer basket, ensuring they don’t touch. If needed, cook in batches for better results.
  7. Spray with Oil: Lightly spray the top of the chicken cutlets with olive oil spray or avocado oil spray to enhance crispiness.
  8. Air Fry the Chicken: Cook the chicken cutlets for 12-15 minutes, flipping halfway through, until they become golden brown and are fully cooked through. The internal temperature of the chicken should reach 165 degrees Fahrenheit for safety.
  9. Rest and Serve: Remove the chicken cutlets from the air fryer and let them rest for a couple of minutes. Garnish with fresh chopped parsley and serve immediately.

Notes

  • Nutritional information is an estimate and may vary with substitutions.
  • Each serving weighs approximately 4.75 oz cooked. For accurate portions, weigh the cooked chicken and divide it by the number of servings.
  • For smaller portions, divide into 6 servings (approximately 3.25 oz cooked per serving).
  • If cooking in batches, keep the first batch covered and warm while the second batch finishes. To reheat, place the first batch in the air fryer for 2 additional minutes to regain crispiness.
  • You can prepare a larger batch, freeze the uncooked breaded chicken in an airtight container or freezer bag, and air fry directly from frozen for 14-17 minutes. Ensure the internal temperature reaches 165 degrees Fahrenheit.
