Main Ingredients

  • 2 packs (17-oz./500g) udon noodles, preferably frozen
  • 2 tbsp vegetable oil
  • 300 g sliced beef rib eye or top sirloin
  • 1/2 medium onion, sliced
  • 40 g carrot, julienned
  • 30 g shiitake mushrooms or any mushrooms of choice, sliced
  • 2 green onions, chopped
  • 1 tbsp oyster sauce, or to taste
  • Toasted sesame seeds and additional green onion for garnish


Instructions

  1. Prepare the Marinade: Combine all bulgogi marinade ingredients — soy sauce, mirin, sesame oil, honey, brown sugar, garlic, and black pepper — in a small bowl and mix well.
  2. Marinate the Beef and Vegetables: In a medium bowl, add the sliced beef, onion, carrot, mushrooms, and green onions. Pour the marinade over this and mix to coat evenly. Set aside for at least 10 minutes or refrigerate overnight for deeper flavor.
  3. Prepare the Udon Noodles: If using frozen udon noodles, soak them in hot water for about a minute to loosen. Use chopsticks to gently separate the noodles, rinse with cold water, drain, and set aside.
  4. Cook the Bulgogi Mixture: Heat vegetable oil in a wok or large pan over medium-high heat. Add the marinated bulgogi mixture and stir-fry for 2-3 minutes until the beef is browned and vegetables are tender.
