Greek Meatballs

  • 1 pound ground chicken
  • 1 egg, large
  • 1/2 cup crumbled feta cheese, chopped small
  • 1.5 tsp dried oregano
  • 1 tsp basil
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dill
  • 1 tsp parsley
  • 1/2 tsp salt
  • 1/2 tsp pepper

Lemon Orzo

  • 1 cup dried orzo, cooked according to package instructions
  • 1 lemon, zested
  • 1 tbsp fresh lemon juice
  • 2 tbsp olive oil or melted butter
  • 2 tbsp grated or shredded parmesan cheese (optional)
  • 1/2 tsp oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp dill

Instructions

  1. Greek Meatballs: In a large bowl, combine all meatball ingredients. Form into 15 meatballs.
  2. Mix with your hands just until combined. In a large pan, cook meatballs until fully browned, then cover and cook for another 5-6 minutes until fully cooked through.

  3. Lemon Orzo: In a large bowl, combine cooked orzo with lemon zest, lemon juice, olive oil or butter, parmesan cheese, and seasonings. Mix well.
  4. Serve the cooked meatballs over the warm lemon orzo and enjoy!
