Greek Meatballs
- 1 pound ground chicken
- 1 egg, large
- 1/2 cup crumbled feta cheese, chopped small
- 1.5 tsp dried oregano
- 1 tsp basil
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp dill
- 1 tsp parsley
- 1/2 tsp salt
- 1/2 tsp pepper
Lemon Orzo
- 1 cup dried orzo, cooked according to package instructions
- 1 lemon, zested
- 1 tbsp fresh lemon juice
- 2 tbsp olive oil or melted butter
- 2 tbsp grated or shredded parmesan cheese (optional)
- 1/2 tsp oregano
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 tsp dill
Instructions
- Greek Meatballs: In a large bowl, combine all meatball ingredients. Form into 15 meatballs.
- Lemon Orzo: In a large bowl, combine cooked orzo with lemon zest, lemon juice, olive oil or butter, parmesan cheese, and seasonings. Mix well.
- Serve the cooked meatballs over the warm lemon orzo and enjoy!
Mix with your hands just until combined. In a large pan, cook meatballs until fully browned, then cover and cook for another 5-6 minutes until fully cooked through.
