Instructions
- Brown the beef: In a large skillet over medium-high heat, cook the ground beef with the chopped onion until the beef is fully cooked through. Drain any excess grease from the skillet.
- Season the beef: Add the salt, pepper, chili powder, cumin, dried cilantro, cayenne, and minced garlic to the cooked beef. Stir well to combine all the seasonings evenly.
- Fry the tortillas: Heat vegetable oil in a separate skillet over medium heat, enough to cover the bottom. Fry the flour tortillas one at a time for 1-2 minutes on each side until golden brown. Place the fried tortillas on paper towels to absorb excess oil.
- Prepare the base: Warm the refried beans to make spreading easier. Spread a layer of refried beans over each fried tortilla.
- Assemble layers: Add a scoop of the seasoned ground beef over the beans. Sprinkle some shredded Colby Jack cheese on top, then add another fried tortilla.
- Add sauce and cheese: Spoon taco sauce over the top tortilla and sprinkle with more shredded cheese.
- Bake: Place the assembled Mexican pizzas on a baking sheet and bake in a preheated oven at 400°F (204°C) for about 10 minutes, until the cheese is melted and bubbly.
- Garnish and serve: Remove the pizzas from the oven and top with diced tomatoes and chopped green onions. Serve immediately and enjoy.
