Description

A simple and delightful recipe for Easy Pan Seared Cod with Romesco Sauce. Tender cod fillets are seasoned and pan-seared to perfection, then topped with a flavorful romesco sauce.


Ingredients

  • 4 (6 oz) cod fillets about 1-inch thick
  • 1 tsp Kosher salt
  • 1/4 tsp freshly ground black pepper

For Cooking:

  • 2 Tbsp light neutral oil (grapeseed, canola, or avocado oil)
  • 3 Tbsp unsalted butter
  • Fresh parsley, chopped, for serving

Romesco Sauce:

  • 1 cup romesco sauce

Instructions

  1. Prepare Romesco Sauce: If you haven’t already, make the romesco sauce.
  2. Season Cod: Pat dry cod fillets and season with salt and pepper.
  3. Pan Sear Cod: Heat oil in a skillet, sear cod until golden brown, flip, add butter, and cook for 3 minutes.
  4. Garnish and Serve: Transfer cod to serving plates, top with romesco sauce, garnish with parsley, and serve.
