Cod Fillets:
- 4 (6 oz) cod fillets about 1-inch thick
- 1 tsp Kosher salt
- 1/4 tsp freshly ground black pepper
For Cooking:
- 2 Tbsp light neutral oil (grapeseed, canola, or avocado oil)
- 3 Tbsp unsalted butter
- Fresh parsley, chopped, for serving
Romesco Sauce:
- 1 cup romesco sauce
Instructions
- Prepare Romesco Sauce: If you haven’t already, make the romesco sauce.
- Season Cod: Pat dry cod fillets and season with salt and pepper.
- Pan Sear Cod: Heat oil in a skillet, sear cod until golden brown, flip, add butter, and cook for 3 minutes.
- Garnish and Serve: Transfer cod to serving plates, top with romesco sauce, garnish with parsley, and serve.
