Description

This English Muffin Breakfast Pizza is a delicious and easy-to-make morning treat that combines crispy toasted muffins with savory scrambled eggs, hearty breakfast meats, and melted cheese, all topped with fresh green onions for a flavorful finish. Perfect for a quick breakfast or brunch, it can also be prepared ahead and frozen for busy mornings.

Ingredients

Units Scale

English Muffins

  • 4 English muffins

Garlic Butter

  • 2 tablespoons butter, melted
  • 1 teaspoon garlic salt

Egg Mixture

  • 8 large eggs
  • 2 tablespoons milk
  • Salt & pepper to taste

Breakfast Meats

  • 1 cup diced cooked breakfast meats (bacon, sausage, ham)

Cheese

  • 1 cup shredded cheddar cheese

Greens

  • 3 green onions, thinly sliced, greens reserved for garnish

Instructions

  1. Preheat and prepare baking sheet: Preheat your oven to 350°F (175°C). Line a baking sheet with foil and set aside.
  2. Prepare garlic butter mixture: In a small bowl, combine melted butter and garlic salt. Split each English muffin in half and brush each muffin half thoroughly with the garlic butter mixture. Arrange the muffin halves on the prepared baking sheet.
  3. Cook eggs: Melt a tablespoon of butter in a large skillet over medium heat. Whisk eggs with 2 tablespoons of milk, then pour into the skillet. Cook, stirring gently, until eggs are softly set—that is, cooked through but still moist.
  4. Add meats and green onions: Stir the diced cooked breakfast meats and sliced green onions into the scrambled eggs. Season the mixture with salt and pepper to taste.
  5. Assemble pizzas: Use a spoon to evenly scoop the scrambled egg mixture onto each toasted muffin half. Top each with shredded cheddar cheese.
  6. Bake: Place the assembled muffins into the preheated oven. Bake for 10-15 minutes, or until the cheese has melted and the muffins are toasted to your liking.
  7. Garnish and serve: Remove from oven, garnish with reserved green onion greens and a pinch of freshly cracked black pepper if desired. Serve immediately for the best flavor and texture.

Notes

  • Make ahead and freeze: Wrap each breakfast pizza individually in plastic wrap or foil. Store in a tightly sealed container or zip-top bag for up to 6 months. To reheat, unwrap and bake in a preheated 350°F oven for about 15 minutes or microwave for 1-2 minutes if frozen.
  • Alternative toppings: Feel free to add other favorite toppings such as diced tomatoes, jalapeños, or different cheeses.
  • Egg consistency: Cook the scrambled eggs just until they are softly set to prevent overcooking when baking.
