  • 16 ounces cavatappi, penne, or medium pasta
  • 1/3 cup salted butter
  • 1/3 cup all-purpose flour
  • 1 teaspoon onion powder
  • 1/2 teaspoon dry mustard powder
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon Old Bay Seasoning
  • 1/4 teaspoon black pepper, or to taste
  • 2 3/4 cups milk
  • 1/2 cup half and half or light cream
  • 2 cups shredded sharp cheddar cheese
  • 1 1/4 cups shredded Gruyere or Swiss cheese
  • 1/2 cup shredded Parmesan cheese

Ingredients for Topping:

  • 1/2 cup seasoned bread crumbs
  • 2 tablespoons melted butter
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon chopped fresh parsley or 1/2 teaspoon dried parsley

Instructions

  1. Preheat oven to 400°F and grease a 9×13 pan. Combine topping ingredients in a bowl and set aside.
  2. Cook pasta al dente, drain, and set aside. Melt butter in a saucepan over medium heat, stir in flour and seasonings.
  3. Add milk and cream gradually to the flour mixture, whisking constantly. Bring to a boil, then simmer until thickened.
  4. Remove from heat, stir in cheeses until melted. Combine sauce with pasta, add half of the lobster, and spread into pan.
  5. Top with remaining lobster and sprinkle with topping mixture. Bake for 20-25 minutes until bubbly and golden.

Notes

  • This recipe uses cooked lobster meat; tails or whole lobster can be used.
  • Substitute other seafood like crab, shrimp, scallops, or salmon.
  • To prepare one day ahead, store topping separately and bake covered for 20 minutes, then uncovered for 10 minutes.
