- 16 oz baby bella mushrooms, thickly sliced
- 1 small onion, finely diced
- 4 garlic cloves, minced

For the Filet Mignon:
- 24 oz filet mignon (beef tenderloin) steaks, 6-8 oz each, about 1 1/2″ thick
- 1/2 cup Merlot wine, or any dry red wine
- 1 1/2 cups beef broth
- 1/2 cup whipping cream
- 1 1/4 tsp sea salt, divided
- 1/2 tsp black pepper, divided
Instructions
- Sauté the Mushrooms: In a pan, cook mushrooms in butter and oil until softened. Add onion, garlic, and thyme. Set aside.
- Sear the Steaks: Season steaks and sear in butter and oil. Transfer to the plate with mushrooms.
- Prepare the Sauce: Deglaze the pan with wine, add broth, and cream. Simmer until thickened.
- Combine and Serve: Return steaks to the pan, coat with sauce, and heat through. Garnish with thyme and serve.
