This French Onion and Apple Grilled Cheese is a delicious twist on a classic comfort food, combining sweet caramelized onions, crisp apples, and gooey cheese in between slices of sourdough bread. Perfect for a cozy lunch or dinner.

For the Caramelized Onions:
- 3 tbsp salted butter
- 2 yellow onions, thinly sliced
- kosher salt and black pepper
- 3/4 cup apple cider
- 1 tbsp fresh thyme leaves
- 1 tbsp chopped fresh sage
- 1 pinch crushed red pepper flakes
For the Sandwich:
- 4 slices prosciutto (optional)
- 8 slices sourdough bread
- 2 tbsp extra virgin olive oil
- 1 1/2 cups shredded fontina cheese
- 1 1/2 cups shredded gouda or white cheddar cheese
- 1 honeycrisp apple, thinly sliced
Instructions
- Caramelize the Onions: Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the onions and cook until softened. Add half the apple cider, season with salt and pepper, and cook until most of the cider has evaporated. Add the remaining cider and cook until the onions are golden and caramelized. Stir in thyme, sage, and crushed red pepper, and remove from heat.
- Prepare the Sandwich: Cook the prosciutto until crisp. Brush olive oil on each slice of bread. Layer cheeses, caramelized onions, apples, and prosciutto on half of the bread slices. Top with the remaining bread slices.
- Cook the Sandwiches: Cook the sandwiches in a skillet until golden on each side. Add butter and sage during the last minute of cooking. Repeat for the remaining sandwiches.
- Serve immediately and enjoy!
Notes
- You can omit the prosciutto for a vegetarian version of this grilled cheese.
- Feel free to experiment with different types of cheese to suit your taste.
