Description

This French Toast Sandwich on Hawaiian Rolls combines fluffy, cinnamon-spiced French toast with savory scrambled eggs, crispy bacon, and melted cheese, creating a decadent breakfast or brunch treat that’s both indulgent and crowd-pleasing.

Ingredients

Units Scale

French Toast

  • 24 pack Hawaiian Rolls, cut horizontally and into sections of 4 rolls
  • 3 eggs
  • 2/3 cup heavy cream or half and half
  • 1 teaspoon cinnamon
  • 2 tablespoons sugar
  • 2 tablespoons butter

Sandwich Filling

  • 8 eggs, for scrambling
  • 2 tablespoons heavy cream
  • 2 teaspoons hot sauce
  • 1/4 teaspoon salt and pepper
  • 1 lb. bacon, cooked to crispy
  • 4 slices cheddar cheese or your favorite cheese
  • 2 tablespoons butter

Optional

  • Syrup for dipping

Instructions

  1. Prepare Egg Mixture for French Toast: In a shallow dish, whisk together the eggs, heavy cream or half and half, cinnamon, and sugar until the mixture is smooth and well combined.
  2. Cook French Toast: In a large skillet over low heat, melt two tablespoons of butter. Pour in the egg mixture and cook slowly, stirring occasionally, until the eggs are just set but still shiny and moist. Remove from heat, top with slices of cheese, and set aside tented with foil.
  3. Prepare French Toast Strips: Increase skillet heat to medium-low. Dip sections of Hawaiian rolls into the egg batter, ensuring they are coated well. Cook each side for about 2 minutes or until golden brown and toasted, then remove and set aside.
  4. Scramble Eggs and Assemble Filling: In the same or a separate skillet, cook 8 eggs with 2 tablespoons of heavy cream, hot sauce, salt, and pepper, scrambling until just cooked through. Set aside.
  5. Cook Bacon: Cook bacon slices until crispy, then drain on paper towels.
  6. Assemble Sandwiches: On the bottom bun, layer scrambled eggs and crispy bacon, then cover with the top bun. Serve warm with optional syrup for dipping.

Notes

  • Use thick-cut bacon for maximum crunch and flavor.
  • You can substitute cheese with your favorite type, such as Swiss or pepper jack.
  • For a sweeter version, add a drizzle of maple syrup inside the sandwich or as a dip.
  • Make ahead: Prepare the French toast and filling in advance, then assemble when ready to serve.
