- 1/2 yellow onion, chopped
- 1 garlic clove, minced
- 24 oz. Rao’s Homemade Tomato Basil Sauce
- 1/4 cup part-skim ricotta cheese
- 1/2 tsp. dried oregano
- 1/2 tsp. Italian seasoning
- 1/2 tsp. salt
- 1/4 cup fresh parsley, chopped
- 8 oz. Banza Chickpea Spaghetti Noodles (full box)
- 1 cup low-moisture, part-skim mozzarella cheese, shredded (112g)
Toppings
- Fresh chopped parsley
- Parmesan cheese
Instructions
- Preheat the oven: Preheat your oven to 350°F to ensure it is ready for baking the dish later.
- Cook the noodles: Follow the package instructions to cook the chickpea spaghetti noodles until al dente. Drain and set aside.
- Sauté aromatics and cook the beef: In a cast-iron skillet or oven-safe pan, heat olive oil over medium heat. Add the minced garlic and chopped onions, cooking for a few minutes until fragrant and softened. Then add the ground beef, breaking it into small pieces as it cooks. Cook until the beef is no longer pink.
- Prepare the meat sauce: Add the jar of tomato basil sauce, dried oregano, Italian seasoning, salt, and chopped parsley to the cooked beef mixture. Stir well to combine all the flavors.
- Incorporate ricotta cheese: Gently stir the ricotta cheese into the meat sauce until thoroughly combined and melted, creating a creamy texture.
- Combine noodles and sauce: Add the cooked chickpea spaghetti noodles to the skillet. Use a fork to mix the noodles into the meat sauce, evenly covering the pan.
- Add mozzarella and bake: Top the dish with shredded mozzarella cheese, ensuring even coverage. Transfer the pan to the preheated oven and bake for 10 minutes or until the cheese is fully melted and the tops of the noodles begin to brown slightly.
