Ingredients
Scale
Sugar Cookie Crust:
- 3/4 cup sugar
- 1 1/4 cups flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup butter, softened
- 1 teaspoon vanilla extract
- 1 large egg
Cream Cheese Frosting:
- 12 ounces cream cheese, softened
- 1/4 cup butter, softened
- 1 teaspoon vanilla extract
- 1 1/4 cups powdered sugar
Fruit Toppings:
- 7-10 strawberries, sliced
- 5-6 kiwis, sliced
- 1 mango, sliced
- 1/2 cup blueberries
- 1 small bunch of grapes, halved
Instructions
- Make the Crust: In a mixing bowl, combine the softened butter, sugar, egg, and vanilla extract. Mix well using an electric mixer or a spoon if the butter is melted. Gradually add the flour, baking powder, and salt, mixing continuously until the dough is fully combined. Chill the dough in the refrigerator for 30 minutes to firm up.
- Bake the Crust: Preheat your oven to 350°F (175°C). Line a baking sheet or baking stone with parchment paper. Roll out the chilled dough onto the parchment paper into an even layer about 1/4 to 1/2 inch thick, leaving some space around the edges. Bake the crust for 20 to 25 minutes until lightly golden. Remove from oven and allow to cool completely.
- Make the Cream Cheese Frosting: Using an electric mixer, beat together the softened cream cheese, butter, powdered sugar, and vanilla extract until the mixture is smooth, creamy, and well blended. Spread the frosting evenly over the cooled sugar cookie crust. Chill again in the refrigerator to allow the frosting to firm up.
- Assemble the Fruit Pizza: Arrange the sliced strawberries, kiwis, mango, blueberries, and halved grapes creatively over the cream cheese frosting. Use the different colors and shapes of the fruit to create an appealing design on top of the pizza.
Notes
- You can use store-bought sugar cookie dough as a convenient alternative to making the crust from scratch.
- Ensure the cream cheese and butter are sufficiently softened for smooth frosting.
- Chilling the dough and frosting helps maintain structure and makes spreading easier.
- Feel free to use other seasonal fruits or berries based on availability and preference.
- Slice the fruit just before serving to keep it fresh and avoid sogginess.
