Description

This Fruit Pizza Recipe features a soft and chewy sugar cookie crust topped with a creamy vanilla cream cheese frosting and a colorful assortment of fresh fruit arranged beautifully. Perfect for a refreshing dessert that’s as visually appealing as it is delicious, this no-hassle recipe combines a baked cookie base with a sweet, tangy topping, making it ideal for parties or family gatherings.

Ingredients

Scale

For the Cookie Crust

  • 16 oz refrigerated cookie dough – softened at room temperature for 1 hour

For the Cream Cheese Frosting

  • 8 oz cream cheese – softened to room temperature
  • 2 Tbsp unsalted butter – softened to room temperature
  • 2 tsp vanilla extract
  • 2 cups powdered sugar

For the Fruit Topping

  • 1 ½ cups sliced strawberries
  • 2 kiwis – skin removed and sliced
  • ½ cup blueberries
  • 9 oz canned mandarin orange sections – drained and patted dry with a paper towel

Instructions

  1. Preheat and Prepare: Preheat your oven to 350℉ (175℃). Prepare a round pizza pan by spraying it with non-stick cooking spray or lining it with parchment paper to prevent sticking.
  2. Shape and Bake the Cookie Crust: Allow the refrigerated cookie dough to soften at room temperature for about 1 hour. Press the softened dough evenly into the pizza pan using your palm and fingertips, forming a pizza-shaped crust. Bake it in the preheated oven for 15 minutes or until the crust turns golden brown. Once baked, remove it from the oven and allow it to cool completely before adding any toppings to prevent melting.
  3. Make the Cream Cheese Frosting: In a large bowl, combine the softened cream cheese, unsalted butter, powdered sugar, and vanilla extract. Using a hand mixer, beat the ingredients together. Initially, the mixture will look clumpy, but continue mixing for 2-3 minutes until it becomes smooth and creamy.
  4. Frost the Cookie Crust: Spread the prepared cream cheese frosting evenly over the cooled cookie crust with a spatula. Leave a small border of cookie exposed around the edges for a finished look.
  5. Prepare and Arrange the Fruit: Wash the strawberries and blueberries thoroughly. Slice the strawberries and kiwis. Drain the canned mandarin orange sections and pat them dry with paper towels to avoid excess moisture. Arrange the fruit in concentric circles on top of the cream cheese frosting, starting from the outer edge and working your way toward the center for a beautiful presentation.
  6. Serve or Store: Serve the fruit pizza immediately to enjoy the fresh textures and flavors, or refrigerate it until ready to serve. Use a sharp knife or pizza cutter to slice the pizza into servings.

Notes

  • Pat fruit dry before decorating to prevent sogginess on the frosting.
  • Allow the cookie crust to cool completely before applying the frosting to prevent it from melting.
  • Use fresh fruit only—avoid frozen fruit which can release excess moisture.
