For the Potatoes:
- 1 tablespoon olive oil
- 2 tablespoons of butter
- 1 lb baby red and yellow potatoes, cut into 1/2 inch cubes
- 3 large garlic cloves, minced
- 1 teaspoon fresh parsley, chopped
- 1 teaspoon fresh thyme, chopped
- 1 teaspoon fresh rosemary, chopped
- 1/4 – 1/2 teaspoon red pepper flakes, depending on taste
- Salt and pepper to taste
For the Steak:
- 1 – 1 1/4 lb sirloin steak, cut into one-inch cubes
- Salt and pepper to taste
Instructions
- Prep Potatoes: Heat a skillet over medium heat, melt 1 tablespoon of butter with ½ tablespoon of olive oil. Add potatoes, garlic, herbs, and red pepper flakes. Cook for 5-6 mins until tender but firm. Season with salt and pepper. Remove potatoes.
- Cook Steak: Discard burnt garlic and herbs. Increase heat to high. Add ½ tablespoon of olive oil and remaining butter. Sear steak for 4-6 minutes until browned and cooked to preference. Season with salt and pepper.
- Combine: Return potatoes to skillet. Cook for 1 minute until heated through. Serve hot.
Notes
- Make sure not to overcrowd the skillet when cooking the steak to ensure proper searing.
- Adjust the red pepper flakes according to your spice preference.
