			Potato Pancakes:
- 12 large, starchy potatoes, peeled and grated
 - 3 large yellow onions, grated
 - 1/2 cup all-purpose flour

Instructions
- Prepare the Potatoes and Onions: Grate the potatoes and onions, then drain excess water by wringing them out or using a sieve. Collect the potato starch.
 - Mix the Ingredients: Season with salt and pepper, then add eggs, flour, and chives. Knead the mixture together.
 - Cook the Pancakes: Heat oil in a pan, spoon pancake-sized amounts, and flatten. Cook until golden brown and crispy on both sides.
 - Serve: Sprinkle with sugar and serve with applesauce and sour cream.

- You can keep the pancakes warm in a 150°F (65°C) oven until serving.
