Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the potatoes.
  2. Prepare Potatoes: Peel the potatoes and cut them into thick wedges or cubes to ensure even cooking.
  3. Combine Ingredients: Place the cut potatoes in a roasting pan, then add the chicken broth, olive oil, lemon juice, minced garlic, dried oregano, paprika, and salt. Toss everything well to thoroughly coat the potatoes with the flavorful mixture.
  4. Initial Covered Roasting: Cover the roasting pan tightly with foil and roast in the preheated oven for 40 minutes. This allows the potatoes to start cooking softly while absorbing the flavors.
