Instructions
- Sauté Aromatics: Heat the olive oil in a large pot over medium heat. Add the finely diced onion and diced carrot, sautéing for 5-6 minutes or until softened and translucent.
- Add Garlic: Stir in the chopped garlic and cook for an additional minute until fragrant, careful not to burn.
- Combine Tomato Elements and Herbs: Add the tomato paste, crushed tomatoes, and chopped fresh dill to the pot. Stir well to combine all the ingredients.
- Add Potatoes, Peas, and Water: Incorporate the cubed potatoes and peas into the pot. Pour in the water and stir thoroughly to evenly distribute all components. Bring the mixture to a boil.
- Simmer Until Tender: Reduce the heat to low and let the stew simmer gently for about 20 minutes, or until the potatoes are fork-tender and the flavors meld together.
- Season and Serve: Taste the stew and season with salt and freshly ground black pepper as desired. Serve hot with crusty bread for a complete meal.
