Chicken
- 1 pound boneless chicken thighs
- 1/3 cup dijon mustard
- 1/4 cup honey
- 1 tablespoon olive oil
- Kosher salt and pepper
Honey Mustard Basting Sauce
- 2 tablespoons honey
- 3 tablespoons dijon mustard
Broccoli
- 4 cups broccoli florets
- 2 to 3 tablespoons olive oil
- Kosher salt and pepper
- Garlic powder
- Chives, for garnish
Instructions
- Marinate the chicken: Place the chicken in a bowl or resealable plastic bag. Whisk together ⅓ cup dijon mustard, ¼ cup honey, and 1 tablespoon olive oil. Pour the mixture over the chicken and marinate for at least 30 minutes or overnight in the refrigerator.
- Preheat and prepare: Preheat the grill to high. Remove the chicken from the fridge about 20 minutes before grilling to bring it to room temperature.
- Prepare basting sauce: In a small bowl, whisk together 2 tablespoons of honey and 3 tablespoons of dijon mustard for basting. This step is optional but will enhance the flavor.
- Season the broccoli: Place the broccoli florets in a bowl. Drizzle them with the remaining olive oil and sprinkle with a generous pinch of salt, pepper, and garlic powder. Toss well to coat evenly. Spread the broccoli on a grill pan in a single layer. If you don’t have a grill pan, use 2 to 3 layers of aluminum foil folded at the edges to form a tray.
- Grill the chicken: Place the chicken on the grill and cook for 5 to 6 minutes per side, or until the internal temperature in the thickest part reaches 165°F. For the last 2 to 3 minutes, brush the chicken with the honey mustard basting sauce.
- Grill the broccoli: While the chicken is cooking, place the broccoli on the grill pan or foil on the other side of the grill. Close the grill lid and toss the broccoli every few minutes until it is charred and golden to your liking. This should take around 10 minutes.
- Serve: Remove the chicken and broccoli from the grill. Let the chicken rest for 5 minutes before serving. Garnish with chives if desired and enjoy!
Notes
- Marinate the chicken for maximum flavor – overnight is best if possible.
- If you don’t have a grill, you can use a grill pan on the stovetop or bake the chicken and broccoli in the oven.
