  • 1/2 cup sour cream

  • 1/4 cup cotija cheese
  • 1 lime, juiced

Instructions

  1. Prepare the Corn
    Remove the husks from the corn, leaving just the core attached. This makes it easier to hold while grilling and eating.
  2. Grill the Corn
    Heat up a grill or a cast iron pan to high heat. Place the corn on the grill and cook, rotating occasionally, until the corn kernels are slightly charred on all sides. This should take about 10-15 minutes.
  3. Make the Topping
    In a small bowl, combine the mayonnaise, sour cream, and freshly chopped cilantro. Mix until smooth and well-blended. This creamy topping will add flavor and moisture to the corn.
  4. Assemble the Corn
