Ingredients

Units Scale

Chicken

  • 2 pounds chicken breasts or thighs, boneless and skinless

Marinade

  • 1/4 cup coconut aminos or soy sauce
  • 1/4 cup orange juice
  • 2 tablespoons honey
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • Zest from half an orange

Instructions

  1. Prepare the Chicken
If using thick chicken breasts, slice them horizontally to create thin cutlets. This will help the chicken cook faster and ensure even browning on all sides.
  2. Marinate the Chicken
Place the chicken and all marinade ingredients into a gallon-sized zip-top bag. Squeeze out any excess air and seal the bag tightly. Spread the marinade evenly over the chicken by laying the bag flat and gently pressing. Marinate the chicken for at least 1 hour—longer if possible, such as several hours or overnight for enhanced flavor.
  3. Preheat the Grill
Set the grill to medium-high heat. Proper preheating ensures the chicken cooks evenly and absorbs a subtle smoky flavor.
  4. Oil and Grill
Lightly oil the grill grates to prevent sticking. Place the marinated chicken directly onto the grill. Cook each side for 5-7 minutes or until the internal temperature of the chicken reaches 165°F. Cooking time may vary depending on the thickness of the chicken pieces. Remove from grill and let rest for a few minutes before serving.

Notes

  • If you prefer, you can sauté this chicken on the stovetop. Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Cook the chicken in a single layer for approximately 5 minutes per side or until fully cooked. Cooking time may increase if using bone-in chicken. The chicken is done when it’s firm to touch, and the juices run clear.
  • Marinating overnight is recommended for the best flavor infusion.
  • For added zestiness, serve with a side of fresh orange slices or garnish with finely chopped fresh herbs like parsley or cilantro.
