Description

This Ground Beef and Rice Skillet is a hearty and flavorful one-pan meal that is perfect for a quick weeknight dinner. With tender ground beef, aromatic veggies, rice, and a blend of spices, this dish is satisfying and easy to make.

Ingredients

Units Scale

Ground Beef and Rice Skillet:

  • 1 lb lean ground beef
  • 1 cup long-grain white rice
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Optional: 1 cup shredded cheddar cheese for topping

Instructions

  1. Brown that beef: Heat your skillet over medium-high heat and add the olive oil and ground beef. Break it up as it cooks and season with salt and pepper.
  2. Veggie time: Once the beef is browned, toss in the chopped onions, bell peppers, and minced garlic. Let them sauté until they’re soft and fragrant, about 3-4 minutes.
  3. Spice it up: Add the paprika and oregano, stirring to combine.
  4. Rice is nice: Add your rice to the skillet, stirring to coat it with the beef and veggie mixture.
  5. Liquid magic: Pour in the beef broth and diced tomatoes. Bring everything to a boil, then reduce the heat and let it simmer.
  6. Patience pays off: Cover the skillet and let it simmer for about 18-20 minutes, or until the rice is tender and has absorbed most of the liquid.
  7. Final touches: Fluff the rice, taste for seasoning, and adjust if needed. If using, sprinkle cheese on top and let it melt before serving.
