Main Ingredients:
- 1lb ground chicken
- 1 small yellow onion, diced
- 1 tbsp olive oil
- 2 cloves minced garlic
- 1 tbsp ginger paste/fresh ginger
- 2 tsp sesame oil
- 1 tbsp sriracha
- 2 tbsp rice vinegar
- 1/4 cup low sodium soy sauce (coconut aminos for GF)
- 3 tbsp honey
Additional Ingredients:
- 1/4 cup chopped green onion, more for topping
- 1/2 cup diced water chestnuts
- 1 large head of butter lettuce
- *peanuts, sriracha, green onion for topping*
Instructions
- Saute Aromatics: In a large saucepan, heat olive oil. Add onion and saute until mostly cooked.
- Add Chicken: Add garlic and ginger for one minute, then add ground chicken. Cook until almost done.
- Prepare Sauce: Whisk together sesame oil, sriracha, rice vinegar, soy sauce, and honey in a bowl.
- Cook Chicken: Pour the sauce over the chicken and let it simmer. Stir in green onion and water chestnuts.
- Thicken Sauce: Allow the sauce to thicken for about 5 minutes, then remove from heat.
- Assemble: Wash and dry butter lettuce leaves. Fill each leaf with chicken mixture and desired toppings.
- Storage: Store any leftover filling in the fridge for up to five days.
