Description

A fun and healthy festive snack featuring strawberry Santas made with fresh strawberries, banana slices, and a creamy ricotta cheese ‘beard’. Perfect for kids and adults alike, this no-cook recipe uses simple ingredients to create an adorable holiday treat that’s both nutritious and visually delightful.

Ingredients

Scale

Fruits

  • 12 fresh strawberries, tops removed
  • 1 ripe banana

Dairy/Alternatives

  • ¼ cup ricotta cheese (alternatively cottage cheese, cream cheese, or coconut yoghurt)

Decorations

  • Black gel icing pen for eyes

Instructions

  1. Prepare Strawberries: Remove the green leafy tops from the strawberries. Then slice a thin section from the top of each strawberry to use as the hat.
  2. Slice Banana: Cut the banana into round slices about ¼ inch thick, which will serve as the face and beard base.
  3. Apply Cheese: Spread a generous amount of ricotta cheese (or your chosen alternative) on one side of the banana slice, thick enough to resemble a beard.
  4. Assemble Base Layers: Place the sliced portion of the strawberry flat on the serving plate, then carefully add the banana slice on top with the cheese side facing down onto the strawberry slice.
  5. Add Eyes: Using a black gel icing pen, draw two small dots on the exposed banana slice at the edge to represent the eyes.
  6. Top with Hat: Place the remaining larger part of the strawberry on top to look like Santa’s hat. Repeat these steps to make as many strawberry Santas as desired.

Notes

  • Use a black gel icing pen to easily create detailed eyes on the banana ‘face’.
  • Ricotta cheese provides a creamy texture and mild flavor, but you can substitute with cottage cheese, cream cheese, or coconut yoghurt depending on preference or dietary needs.
  • This is a no-cook recipe, making it quick and easy to prepare for holiday parties or snacks.
