For the Casserole:
- 1 lb lean ground beef
- 1/2 cup yellow onion, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 2–3 medium-sized Russet potatoes, peeled and thinly sliced
- 1 can condensed cream of mushroom soup (10.75 oz)
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- Salt and pepper, to taste
For Topping:
- French fried onions
- Sliced green onions, optional, for garnish
- Chopped fresh parsley, optional, for garnish
Instructions
- Preheat Oven: Preheat the oven to 375°F (190°C) and grease a 9×13-inch casserole dish.
- Cook Beef and Vegetables: Brown the ground beef in a skillet, then add onion, bell pepper, and garlic. Sauté until vegetables are soft.
- Prepare Sauce: Mix cream of mushroom soup and sour cream, season with salt and pepper.
- Layer Casserole: Layer sliced potatoes in the baking dish, top with beef mixture, and pour sauce over. Add a layer of cheddar cheese.
- Bake: Bake for 30-35 minutes until potatoes are tender and top is golden.
- Top and Serve: Sprinkle fried onions on top and bake for 5 more minutes. Let cool slightly before serving, garnish with green onions or parsley if desired.
