This Hobo Casserole is a comforting and hearty dish that layers lean ground beef, vegetables, creamy sauce, and cheese over thinly sliced potatoes, baked to golden perfection. Topped with crispy fried onions, it’s a rustic and satisfying meal for any occasion.

  • 1 lb lean ground beef
  • 1/2 cup yellow onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 23 medium-sized Russet potatoes, peeled and thinly sliced
  • 1 can condensed cream of mushroom soup (10.75 oz)
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper, to taste

For Topping:

  • French fried onions
  • Sliced green onions, optional, for garnish
  • Chopped fresh parsley, optional, for garnish

Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C) and grease a 9×13-inch casserole dish.
  2. Cook Beef and Vegetables: Brown the ground beef in a skillet, then add onion, bell pepper, and garlic. Sauté until vegetables are soft.
  3. Prepare Sauce: Mix cream of mushroom soup and sour cream, season with salt and pepper.
  4. Layer Casserole: Layer sliced potatoes in the baking dish, top with beef mixture, and pour sauce over. Add a layer of cheddar cheese.
  5. Bake: Bake for 30-35 minutes until potatoes are tender and top is golden.
