  • 2 zucchini

Sauce:

  • 2 tbsp olive oil
  • 1 red onion
  • 1 red bell pepper
  • 5 cloves garlic
  • salt, pepper
  • 1/4 tsp dry oregano
  • 1/4 tsp dry thyme
  • 700 grams crushed tomatoes
  • 2 tbsp fresh basil

Herb dressing:

  • 5 tbsp olive oil
  • 2 tbsp fresh basil
  • 2 tbsp fresh parsley
  • 1 tsp dry thyme
  • 3 cloves garlic
  • salt, pepper to taste

Instructions

  1. Slice the vegetables evenly: Prepare and set aside.
  2. Make the herb dressing: Combine chopped herbs, olive oil, and minced garlic. Season with salt and pepper.
  3. Preheat the oven: to 200°C / 390°F.
  4. Prepare the tomato sauce: Sauté onion, pepper, and garlic. Add seasonings and crushed tomatoes. Cook for 10 minutes. Stir in basil.
  5. Arrange the vegetables: Layer them on the sauce in a decorative pattern. Season and drizzle with herb dressing.
  6. Bake: Covered for 40 minutes, then uncovered for 20 minutes, until vegetables are tender.
  7. Serve: Hot, alone or with polenta, rice, or bread.
