Description

This Easy Chicken Ramen Stir Fry is a quick and flavorful dish that combines tender ground chicken, crunchy vegetables, and chewy noodles in a savory sauce. Perfect for a busy weeknight dinner!


Ingredients

Sauce:

  • 1/3 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon grated peeled fresh ginger or store-bought ginger paste
  • 1 tablespoon sesame oil
  • 1 teaspoon Sriracha or to taste

Stir Fry:

  • 2 teaspoons olive oil
  • 1 lb ground chicken
  • 1 14ounce package coleslaw mix
  • 2 bell peppers, thinly sliced (red, orange, or yellow)
  • 1/4 cup pasta cooking water
  • 3 packages instant ramen noodles, seasoning discarded (3oz / 85 g per package)

Garnish:

  • sliced green onion
  • hot sauce
  • sesame seeds

Instructions

  1. Make the sauce: In a medium bowl, whisk together all of the sauce ingredients. Set aside.
  2. Cook the chicken: Warm a large skillet over medium heat. Add olive oil and sauté the ground chicken until fully cooked.
  3. Add vegetables: Pour the sauce over the chicken, add bell peppers and coleslaw mix. Cover and cook until vegetables are tender.
  4. Cook noodles: Boil ramen noodles in a separate pot. Reserve ¼ cup of cooking water.
  5. Combine: Mix cooking water into chicken and vegetables. Add drained noodles and toss until coated.
  6. Serve: Garnish with green onions, hot sauce, and sesame seeds. Enjoy!
