- 50g mozzarella (approx. 1.75 oz), grated
- 2 eggs
- Salt & pepper, to taste

- Heat the base: Warm a non-stick frying pan over medium heat. Add the hot honey and let it bubble slightly to release its sweetness and spice.
- Add the cheese: Sprinkle the grated mozzarella evenly over the bubbling hot honey in the pan. Allow it to melt slowly, forming a golden, gooey layer that will create a rich base for the eggs.
- Crack in the eggs: Gently crack the eggs directly over the melted cheese layer. Season with salt and pepper to taste. Cover the pan with a lid and cook the eggs until the whites are set but the yolks remain cooked to your preferred consistency.
- Fold and finish: Once the eggs are cooked, remove the lid. Using a spatula, carefully fold the cheesy eggs over, similar to folding an omelette, combining the melted mozzarella and honey with the eggs.
- Serve and enjoy: Transfer the hot honey mozzarella eggs to a plate immediately. Serve warm for the best melty texture and flavor experience.
