Meat and Seasonings
- 1 pound ground turkey thighs (93% lean)
- 1 teaspoon Diamond Crystal kosher salt (or 1/2 teaspoon of other salt)
- 1/4 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
Sauces and Fresh Herbs
- 1 tablespoon mayonnaise
- 1 tablespoon Dijon mustard
- 1/2 cup fresh parsley, chopped
Cooking Oil
- 4 tablespoons olive oil (for frying)
Instructions
- Mix ingredients: In a medium bowl, combine the ground turkey, mayonnaise, Dijon mustard, kosher salt, black pepper, garlic powder, onion powder, smoked paprika, and chopped parsley. Mix thoroughly until all ingredients are evenly distributed.
- Form patties: Using moist hands to prevent sticking, divide the mixture into four equal portions and shape each into a ½-inch thick patty.
- Heat oil: Warm the olive oil in a large skillet over medium heat until shimmering.
- Cook patties: Add the patties to the skillet and cook for about 5 minutes per side until golden brown and cooked through (internal temperature of 165°F / 74°C).
- Serve: Remove from skillet and serve immediately with your favorite buns or toppings.
Notes
- I use 4 tablespoons of olive oil for even browning; it may remain in the skillet but ensures rich flavor.
- The mixture will be moist and slightly sticky—handle with lightly moistened hands for easier shaping.
- Using ground turkey thighs keeps the burgers juicy; turkey breast can result in dry, fall-apart patties.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days; reheat in microwave at 50% power. Freeze for up to 3 months for longer storage.
