Peaches

    • 2 yellow peaches, pitted, sliced

Peach Glaze

    • 1/2 cup (160 g) peach preserves
    • 1 tablespoon extra virgin olive oil
    • 1 teaspoon soy sauce
    • 1 teaspoon apple cider vinegar
    • 1 teaspoon Dijon mustard
    • 1/2 teaspoon garlic, minced
    • 1/2 teaspoon kosher salt
    • 1/8 teaspoon black pepper
    • 1/8 teaspoon red pepper flakes

Chicken

  • 2 pounds boneless, skinless chicken thighs
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili powder
  • 2 tablespoons extra virgin olive oil
  • 1 medium jalapeno pepper, thinly sliced

Instructions

  1. Prepare the Peach Glaze: To a medium bowl, combine the peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes. Mix until fully incorporated and set aside.
  2. Season the Chicken: Pat the chicken thighs dry using paper towels. In a small bowl, mix kosher salt, black pepper, and chili powder. Rub this seasoning mixture evenly over the chicken thighs.
  3. Cook the Chicken: Heat a large nonstick skillet over medium heat and add the olive oil. Once the oil is hot, place the chicken thighs in the skillet. Depending on the skillet size, you may need to work in batches. Cook the chicken for 5 minutes, flip, reduce the heat to medium-low, and cook for an additional 5 minutes until it reaches an internal temperature of 165°F. Remove the chicken from the skillet, transfer it to a plate, and cover it with foil to keep warm.
  4. Sauté Jalapenos and Peaches: Using the same skillet, raise the heat back to medium. Add the sliced jalapeno peppers and cook for 3 minutes. Then add the sliced peaches and cook for an additional 3 minutes, or until softened.
  5. Add Peach Glaze: Pour the prepared peach glaze into the skillet with the jalapenos and peaches. Stir well to ensure all pieces are evenly coated in the glaze.
  6. Combine Chicken and Serve: Return the cooked chicken thighs to the skillet. Spoon the glaze over the top of the chicken and simmer for 1-2 minutes, or until the chicken is heated through. Serve warm and enjoy.

Notes

  • Adjust the spice as needed by increasing or reducing the amount of jalapenos or red pepper flakes.
  • Boneless, skinless chicken breasts can be used in place of chicken thighs if preferred.
  • Fresh peaches work best for this recipe, but canned peaches can be used in a pinch.
