    • 1 onion, diced
    • 2 cups baby spinach
    • 1/2 cup mayo (homemade or store-bought)

    • 1/2 teaspoon black pepper
    • 1/2 teaspoon dried parsley
    • 1/4 teaspoon dried dill
    • Pinch fine sea salt
    • 1 cup shredded cheddar cheese, divided
    • 3 cups shredded cooked chicken
    • Chopped scallions for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 350°F.
  2. Sauté the vegetables: Heat 1 tablespoon of avocado oil in a small skillet over medium heat. Once hot, add the diced onion and cook for 2 minutes. Add the baby spinach and sauté until wilted. Remove from heat and transfer the mixture to a large bowl.
  3. Mix the dip ingredients: In the bowl with the onion and spinach, add mayo, hot sauce, garlic powder, onion powder, black pepper, parsley, dill, salt, and 1/2 cup of shredded cheddar cheese. Mix everything together until well combined.
  4. Assemble the dip: Transfer the combined dip mixture into a 13×9 inch baking dish (or a similar size). Spread evenly and top with the remaining 1/2 cup of shredded cheddar cheese.
  5. Bake the dip: Place the dish in the preheated oven and bake for 30 minutes, or until the cheese is melted and bubbling.
  6. Serve: Remove the dish from the oven, garnish with chopped scallions, and serve hot with carrots, celery stalks, crackers, tortilla chips, or other veggies.

Notes

  • This recipe calls for cooked, shredded chicken. You can use rotisserie chicken, leftovers from another meal, or prepare fresh shredded chicken using an Instant Pot or slow cooker.
