Instructions
- Preheat the oven: Preheat the oven to 350°F.
- Sauté the vegetables: Heat 1 tablespoon of avocado oil in a small skillet over medium heat. Once hot, add the diced onion and cook for 2 minutes. Add the baby spinach and sauté until wilted. Remove from heat and transfer the mixture to a large bowl.
- Mix the dip ingredients: In the bowl with the onion and spinach, add mayo, hot sauce, garlic powder, onion powder, black pepper, parsley, dill, salt, and 1/2 cup of shredded cheddar cheese. Mix everything together until well combined.
- Assemble the dip: Transfer the combined dip mixture into a 13×9 inch baking dish (or a similar size). Spread evenly and top with the remaining 1/2 cup of shredded cheddar cheese.
- Bake the dip: Place the dish in the preheated oven and bake for 30 minutes, or until the cheese is melted and bubbling.
- Serve: Remove the dish from the oven, garnish with chopped scallions, and serve hot with carrots, celery stalks, crackers, tortilla chips, or other veggies.
Notes
- This recipe calls for cooked, shredded chicken. You can use rotisserie chicken, leftovers from another meal, or prepare fresh shredded chicken using an Instant Pot or slow cooker.
- For the best buffalo flavor, using Frank’s Red Hot Sauce is recommended.
