For the sauce:
- 1/4 cup soy sauce
- 2 tsp cornstarch
- 1/2 tbsp brown sugar, packed
- 1/2 tsp red chili flakes, or to taste
For the stir-fry:
- 2 tbsp sesame oil
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 15 oz (450g) ground turkey
- 6 tbsp chives, chopped
- 2 tbsp sesame seeds
Instructions
- Prepare the sauce: In a small bowl, combine soy sauce, cornstarch, brown sugar, and chili flakes. Mix until the cornstarch is dissolved and set aside.
- Cook the turkey: Drizzle a large skillet with sesame oil over medium-high heat. Add garlic and ginger and sauté until fragrant, about 30 seconds. Add ground turkey and cook, breaking it into small chunks with a spatula, until it loses its raw red color, about 5-7 minutes.
- Add the sauce: Pour the soy sauce mixture into the skillet with the cooked turkey. Stir well and cook over high heat for 2-3 minutes until the sauce turns golden brown and fragrant. If the sauce is too thick, add 1 tbsp water to loosen it. Stir in chopped chives (reserve some for garnish), then turn off the heat.
- Finish and serve: Sprinkle the dish with sesame seeds and remaining chives. Serve hot over steamed rice, accompanied by vegetables of your choice.
