Description

An easy, comforting Lazy Enchiladas recipe featuring layers of ground beef, tortillas, cheese, and enchilada sauce that bake to perfection with slightly crispy edges.

Meat & Seasoning

    • 1 lbs. lean ground beef (96/4)
    • 1 tbsp. ground cumin
    • 1 tsp. smoked paprika
    • 1 tsp. garlic powder
    • 1 tsp. chili powder
    • 2 tbsp. water

Other Ingredients

  • 1 can Red Enchilada Sauce (19 oz.)
  • 1 can diced green chilies (4.5 oz.)
  • 1 cup Mexican Cheese, shredded (112g)
  • 4 Super Soft Mission Flour Tortillas

Instructions

  1. Prepare the oven: Preheat the oven to 375°F.
  2. Cook the ground beef: In a pan over medium heat, brown the ground beef while breaking it into small pieces. In a small bowl, mix the seasonings (ground cumin, smoked paprika, garlic powder, and chili powder) with water to create a paste. Add the seasoning paste to the nearly cooked ground beef, mix well, and combine. Add green chilies and let everything simmer for a few minutes while preparing to layer the enchiladas.
  3. Prepare the baking dish: Spray a 9 x 13 baking dish with non-stick spray. Add a thin layer of enchilada sauce to the bottom of the dish to prevent tortillas from sticking.
  4. Layer ingredients: Place 2 tortillas across the enchilada sauce. Evenly spread half the ground beef over the tortillas, followed by half of the remaining enchilada sauce, and then half of the shredded cheese. Repeat the process for the second layer using the rest of the ingredients.
  5. Bake: Once all ingredients are layered, place the dish in the oven. Bake for 25 minutes until the enchiladas are bubbly and the edges are slightly crisp.
  6. Serve: Cut through the layered tortillas and serve warm. Each serving is roughly 230 grams.
