Then, whip the mixture vigorously for 6-7 minutes until it becomes a glossy, stiff meringue. Gradually add the cream of tartar and finally fold in the Lebkuchen spice mix to infuse the meringue with warm, aromatic flavor.
- Cut Waffle Bases: Using a cookie cutter, punch out 12 circles around 5 cm in diameter from the large waffle sheet. Arrange these on a flat board as the base for the meringue.
- Pipe Meringue onto Bases: Transfer the meringue into a piping bag fitted with an open round nozzle. Pipe uniform dollops of meringue onto each waffle circle, ensuring even coverage. Place these assembled bases with meringue into the refrigerator and let them chill for about 1 hour to set.
- Melt Chocolate: Gently melt the Lebkuchen chocolate along with the coconut fat either over a hot water bath or using a microwave at low power, stirring frequently until smooth and glossy.
- Coat the Meringue Treats: Place the chilled meringue-covered waffles on a wire rack set above a clean baking tray to catch drips. Pour the melted chocolate evenly over each treat. Then crumble the soft Lebkuchen heart over the top for a festive finishing touch.
