Description

This Lemon Herb Sheet Pan Salmon is a quick, healthy, and flavorful meal that’s perfect for a busy weeknight or a light weekend dinner. Fresh salmon fillets are baked alongside an array of bright, nutrient-packed vegetables with a delicious blend of butter and herbs.

For the Vegetables

      • 1 Medium summer squash, sliced
      • 2 Medium zucchini, sliced
      • 1 Red bell pepper, sliced
      • 78 Large pieces of broccolini
      • 12 tbsp Olive oil
      • Salt and pepper, to taste

For the Salmon

    • 2 lbs. Salmon, cut into 5 sections
    • 2 tbsp Butter, melted
    • 1 tbsp Parsley, chopped
    • 1 tbsp Rosemary, chopped
    • 1 tbsp Oregano
    • 1 tbsp Basil
    • 2 tsp Minced garlic
    • Salt and pepper, to taste

Instructions

  1. Preheat the oven: Begin by preheating your oven to 400 degrees Fahrenheit.
  2. Prepare the vegetables: Slice the summer squash, zucchini, and red bell pepper. Place these vegetables along with the broccolini on a large baking sheet.
  3. Season the vegetables: Drizzle the vegetables with 1-2 tablespoons of olive oil, and sprinkle salt and pepper over them to your liking. Toss to ensure even coating, and then move the vegetables to the sides of the baking sheet to create space in the center.
  4. Prepare the salmon: Place the salmon pieces, skin side down, in the center of the baking sheet. Lightly salt and pepper the salmon to taste.
  5. Make the herb butter mixture: In a small bowl, mix together the melted butter, parsley, rosemary, oregano, basil, and minced garlic. Stir well to combine.
  6. Spread the herb mixture: Using a spoon, place a portion of the herb butter mixture on top of each salmon piece. Spread it evenly with the back of the spoon to coat the fillets.
  7. Bake the dish: Put the baking sheet in the oven and bake for 25 minutes. The salmon should cook through and the vegetables should become tender.
  8. Serve and enjoy: Remove the baking sheet from the oven, serve the salmon and vegetables immediately, and enjoy your flavorful meal.

Notes

  • Use fresh herbs for the best flavor, but dried herbs can work in a pinch.
  • Feel free to substitute or add your favorite vegetables to the baking sheet.
  • Be careful not to overcook the salmon; it’s best removed from the oven when it just flakes with a fork.
