Tender and flavorful light buffalo turkey meatballs made in the Crock Pot, perfect for a quick and easy meal or appetizer.

Meatballs
- 1 lb. Lean Jennie-O ground turkey
- 1/4 c. old fashioned oats
- 1 egg
- 1/2 c. diced onion
- 1/3 c. Bleu cheese crumbles
- 1/2 tsp. diced garlic
Sauce
- 2/3 c. buffalo wing sauce
Instructions
- Combine Ingredients: In a medium bowl, combine all the ingredients except the buffalo sauce. Use your hands to mix them until well combined. Form the mixture into 18 meatballs, each about 1.5 inches in diameter.
- Cook Meatballs in Skillet: Spray a large non-stick skillet with cooking spray and place it on medium-high heat. Add the meatballs to the heated pan and cook for 2-3 minutes. Carefully turn the meatballs over and cook for another 2-3 minutes to brown them slightly.
- Prepare Crock Pot Base: Meanwhile, pour just enough buffalo sauce to coat the bottom of the Crock Pot.
- Add Meatballs to Crock Pot: Place the browned meatballs (still mostly raw) into the Crock Pot over the buffalo sauce. Pour the remaining buffalo sauce over the meatballs and ensure they are well-coated.
- Cook in Crock Pot: Cover the Crock Pot with a lid and cook on high for 2 hours or on low for 4 hours.
Notes
- For a spicier flavor, choose a hotter buffalo wing sauce.
- Serve these meatballs with celery sticks and extra bleu cheese dressing for dipping.
- These can be made ahead of time and reheated before serving.
