Description

A lighter take on a classic Cajun chicken pasta dish, this recipe combines tender chicken pieces and colorful bell peppers in a creamy, Cajun-spiced sauce, served over al dente pasta. Perfect for a flavorful weeknight dinner!

Pasta:

  • 1 pound short-cut pasta

Cajun Chicken:

  • 4 tablespoons extra virgin olive oil
  • 1 pound chicken tenders, cut into bite-size pieces
  • 1 tablespoon, plus 1-2 teaspoons Cajun seasoning
  • Kosher salt and black pepper

Veggies:

  • 1 medium yellow onion, chopped
  • 2 bell peppers, chopped
  • 3 cloves garlic, finely chopped or grated
  • Crushed red pepper flakes

Creamy Sauce:

  • 1 cup low sodium chicken broth
  • 1 cup milk
  • 2 ounces cream cheese, at room temperature
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh basil

Instructions

  1. Cook Pasta: Boil salted water and cook pasta al dente. Drain.
  2. Sear Chicken: Brown chicken with onion and Cajun seasoning. Remove chicken.
  3. Sauté Veggies: Cook bell peppers, garlic, and spices. Add broth, milk, and cream cheese. Simmer.
  4. Finish Dish: Add Parmesan, pasta, and chicken. Cook briefly. Stir in basil. Serve.
