Pasta:
- 1 pound short-cut pasta
Cajun Chicken:
- 4 tablespoons extra virgin olive oil
- 1 pound chicken tenders, cut into bite-size pieces
- 1 tablespoon, plus 1-2 teaspoons Cajun seasoning
- Kosher salt and black pepper
Veggies:
- 1 medium yellow onion, chopped
- 2 bell peppers, chopped
- 3 cloves garlic, finely chopped or grated
- Crushed red pepper flakes
Creamy Sauce:
- 1 cup low sodium chicken broth
- 1 cup milk
- 2 ounces cream cheese, at room temperature
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh basil
Instructions
- Cook Pasta: Boil salted water and cook pasta al dente. Drain.
- Sear Chicken: Brown chicken with onion and Cajun seasoning. Remove chicken.
- Sauté Veggies: Cook bell peppers, garlic, and spices. Add broth, milk, and cream cheese. Simmer.
- Finish Dish: Add Parmesan, pasta, and chicken. Cook briefly. Stir in basil. Serve.
