Horseradish Mixture

  • 2 cups peeled and diced horseradish root
  • 1/4 cup water
  • 1/2 teaspoon fine sea salt
  • 3 tablespoons white vinegar

Salmon

  • 1 lb. wild-caught salmon filets
  • 2 tablespoons butter or ghee, melted
  • 1 tablespoon dijon mustard
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon freshly ground pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons finely minced parsley for garnish
  • Fresh lemon for garnish

Instructions

  1. Prepare the Horseradish Mixture: Add the peeled and diced horseradish root and water to a food processor. Pulse until finely ground, being careful not to inhale any of the fumes. Add sea salt and vinegar, then pulse until combined. Transfer the mixture to a container.
  2. Preheat the Broiler: Set your broiler to 500°F. Arrange the salmon fillets on a sheet pan to prepare for cooking.
  3. Mix the Horseradish Topping: In a bowl, mix 1-½ cups of the prepared horseradish with melted butter, dijon mustard, sea salt, ground pepper, and garlic powder until well combined.
  4. Top the Salmon: Evenly spread the horseradish mixture over the top of each salmon fillet.
  5. Broil the Salmon: Place the salmon under the broiler and cook on high for 7-9 minutes, or until the fish reaches an internal temperature of 170ºF and the horseradish topping is lightly browned and crispy.
  6. Garnish and Serve: Sprinkle the cooked salmon with minced parsley and a squeeze of fresh lemon juice. Serve immediately with your favorite side dishes.
