Potatoes
- 3 lbs yellow baby potatoes, washed and diced into bite-size pieces
Dressing
- 3/4 cup sour cream
- 1/4 cup mayonnaise
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp kosher salt
- 1/4 tsp ground black pepper
Add-ins & Garnish
- 1 cup cheddar cheese, shredded
- 8 cooked bacon slices, chopped or crumbled
- 3 Tbsp chives, fresh, chopped
- 2 Tbsp parsley, fresh, chopped, for garnish
Instructions
- Boil the Potatoes
Add the diced potatoes to a large pot of salted boiling water over medium-high heat. Reduce to a simmer and cook until tender, about 10 minutes. Once done, drain and rinse the potatoes under cold water. Set them aside to cool to room temperature. - Prepare the Dressing
While the potatoes cool, mix the sour cream, mayonnaise, garlic powder, onion powder, salt, and pepper in a medium-sized mixing bowl until well combined. - Combine Ingredients
Gently toss the cooled potatoes with the sour cream mixture in a large bowl until the potatoes are evenly coated. - Add the Mix-ins
Stir in the shredded cheddar cheese, chopped bacon, and fresh chives until evenly distributed throughout the salad. - Adjust Seasoning & Garnish
Taste and adjust salt and pepper as needed. Finally, garnish the salad with fresh parsley for an added burst of flavor. - Chill
Chill the potato salad in the refrigerator for at least one hour before serving. Serve and enjoy this delicious dish!
