Brine:
- 8 cups cold water
- 1/2 cup corn syrup (or 1/3 cup sugar)
- 3 tablespoons salt
- 1 teaspoon white vinegar
Fries:
- 6 large Russet potatoes (about 4.5 pounds)
- 1 quart vegetable oil
- 1/2 cup vegetable shortening
- Salt for seasoning
Instructions
- Prepare the Brine: Combine cold water, corn syrup, salt, and vinegar. Set aside.
- Prepare the Potatoes: Peel, rinse, and slice the potatoes into thin strips. Place them in the brine, ensuring they are submerged. Refrigerate for 2 hours or overnight.
- Fry the Potatoes: Drain and rinse the potatoes, then pat them dry. Fry in batches at 300°F for 5 minutes. Remove and drain. Increase oil temperature to 400°F, refry until golden brown.
- Season and Serve: Drain the fries on paper towels, season with salt, and serve hot.
Notes
- Leftover fries can be refrigerated and reheated in the oven for 10 minutes or frozen for future use.
