For Steak Bites:
- 1.5 lb steak, cut into bite sized pieces approx. 1 1/2 in. cubes
- 2-3 tbsp olive oil
- 1/2 tbsp fresh thyme, finely chopped (or 3/4 tsp dried thyme)
- 1 tsp fresh rosemary, chopped (or 1/2 tsp dried)
- 1 tsp dried oregano
- 2 garlic cloves, minced
- 2 tsp lemon juice
- 1/2 tsp sea salt
- 1/2 tsp freshly cracked pepper
- 1/3 cup feta cheese
- 1 cup grape tomatoes, halved
For the Yogurt Sauce:
- 1/2 cup plain Greek yogurt
- 1-2 garlic cloves, minced
- 1 tsp lemon juice
- 2 tsp olive oil
- 1 tbsp chopped dill (or 1-2 tsp dried)
- Salt, to taste
Instructions
- Marinate the Steak: In a medium bowl or a large Ziploc bag, combine olive oil, garlic, oregano, thyme, rosemary, lemon juice, salt, and pepper. Whisk or shake well to blend all the flavors. Add the steak bites, making sure each piece is coated thoroughly. Allow the steak to marinate for at least 30 minutes, or for several hours up to overnight for maximum flavor infusion.
- Cook the Steak Bites: Heat a cast iron or nonstick skillet over medium-high heat. Add the steak pieces along with any leftover marinade and extra olive oil. Cook the steak bites for 2-3 minutes on each side, turning only once to develop a nice crust. If you prefer your steak more well done, let the pieces cook for an additional 2-4 minutes. Remove the skillet from heat.
- Prepare the Tomatoes and Feta: Toss the halved grape tomatoes in the hot skillet with the cooked steak to warm them slightly. Then sprinkle the feta cheese over the top just before serving to add creamy, salty richness.
- Make the Yogurt Sauce: In a small bowl, combine the Greek yogurt, minced garlic, lemon juice, olive oil, chopped dill, and salt to taste. Stir well and chill until ready to serve.
- Serve: Spoon the yogurt sauce over the steak bites or serve it on the side as a dip. Enjoy the dish on its own, over rice, or with your favorite sides.
Notes
- Marinate the steak for as long as possible—at least 30 minutes, but preferably several hours or overnight—to deepen the flavors.
- Do not overcook the steak bites; they cook quickly so watch them carefully and remove from heat just before you think they are fully done as they will continue cooking off the stove.
- These steak bites can be served in various ways; a favorite is over rice with a dollop of the tangy yogurt sauce for added creaminess.
