- 2 cucumbers
- 2 tablespoons finely chopped chives or green onions
- 1 tablespoon finely chopped fresh dill

- 1/2 cup sour cream
- 2 tablespoons vinegar
- 1 teaspoon sugar
- 1/2 teaspoon salt (for the dressing)
- 1/4 teaspoon black pepper
Instructions
- Prepare the cucumbers: For ordinary cucumbers, peel, slice lengthwise, and remove the seeds. For hot house cucumbers, just slice thinly without peeling. Slice the cucumbers as thin as possible, no more than 1/8 inch.
- Sprinkle with salt: Spread out the cucumber slices and sprinkle generously with salt to draw out moisture. Let sit for 20 minutes.
- Pat dry: After 20 minutes, pat and press the cucumber slices with a paper towel to remove excess water.
- Make the dressing: In a bowl, combine sour cream, vinegar, chopped chives, dill, sugar, 1/2 teaspoon salt, and black pepper. Mix well until smooth.
- Combine and chill: Toss the drained cucumbers with the dressing until evenly coated. Cover and chill in the refrigerator for at least 10 minutes before serving to allow flavors to meld.
Notes
- Use very thinly sliced cucumbers for the best texture and presentation.
- Adjust the salt after draining the cucumbers, as they will have released some moisture.
- This salad is best served chilled and can be prepared ahead of time.
