Description

Mizeria is a refreshing Polish cucumber salad that highlights the crispness of fresh cucumbers combined with a tangy, creamy dressing infused with herbs. Perfect as a side dish, it offers a light and flavorful addition to any meal, especially during warm weather.

  • 2 cucumbers
  • 2 tablespoons finely chopped chives or green onions
  • 1 tablespoon finely chopped fresh dill

Dressing and Seasonings

  • 1/2 cup sour cream
  • 2 tablespoons vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt (for the dressing)
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the cucumbers: For ordinary cucumbers, peel, slice lengthwise, and remove the seeds. For hot house cucumbers, just slice thinly without peeling. Slice the cucumbers as thin as possible, no more than 1/8 inch.
  2. Sprinkle with salt: Spread out the cucumber slices and sprinkle generously with salt to draw out moisture. Let sit for 20 minutes.
  3. Pat dry: After 20 minutes, pat and press the cucumber slices with a paper towel to remove excess water.
  4. Make the dressing: In a bowl, combine sour cream, vinegar, chopped chives, dill, sugar, 1/2 teaspoon salt, and black pepper. Mix well until smooth.
  5. Combine and chill: Toss the drained cucumbers with the dressing until evenly coated. Cover and chill in the refrigerator for at least 10 minutes before serving to allow flavors to meld.

Notes

  • Use very thinly sliced cucumbers for the best texture and presentation.
  • Adjust the salt after draining the cucumbers, as they will have released some moisture.
  • This salad is best served chilled and can be prepared ahead of time.
