Moose Tracks Fudge is a rich, layered treat combining creamy white chocolate vanilla fudge with a dark semi-sweet chocolate ganache swirl, studded with mini peanut butter cups. This no-bake fudge comes together easily using a microwave or stovetop and is perfect for gifting or indulging any chocolate and peanut butter lover.

Chocolate Ganache
- 3 tablespoons heavy whipping cream
- 3 ounces semi-sweet chocolate (finely chopped bars or chips)
Vanilla Fudge Layer
- 24 ounces white chips (Nestle Premier White Morsels or 28 ounces pure white chocolate)
- 14 ounces (1 can) sweetened condensed milk
- 1 teaspoon pure vanilla extract or vanilla bean paste
Mix-ins & Topping
- 1 ⅓ cups mini peanut butter cups
Instructions
- Make Chocolate Ganache: Combine the semi-sweet chocolate and heavy whipping cream in a microwave-safe bowl or measuring cup. Heat in the microwave for two 15-second bursts, stirring after each until melted and smooth. Set aside while making the vanilla fudge.
- Prepare Vanilla Fudge Layer: Place the white chips in a large microwave-safe bowl and heat at high power for 1 minute. Remove and stir in the sweetened condensed milk. Heat at 70% power for 90 seconds, then let sit in the microwave for 3 minutes. Stir until smooth. If chips are not fully melted, let rest 3-5 minutes, stirring again. If needed, heat in additional 10-second bursts at 70% power with resting and stirring until fully melted. Stir in vanilla extract until creamy and smooth.
- Layer the Fudge: Pour about two-thirds of the vanilla fudge into a non-stick tin foil-lined 8-inch square baking pan, spreading evenly. Pour about two-thirds of the semi-sweet chocolate ganache over the vanilla fudge and swirl together using a toothpick or skewer. Immediately sprinkle 1 cup of mini peanut butter cups over the fudge.
- Add Remaining Layers: Reheat the remaining vanilla fudge in the microwave at 70% power for 5-10 seconds to warm, then stir and pour over the peanut butter cups. Drizzle the remaining chocolate ganache on top and swirl again with a toothpick or skewer.
- Chill and Set: Cover the pan with plastic wrap and chill in the refrigerator for about 2 hours or leave at room temperature for about 4 hours until the fudge firms up.
- Serve: Cut the fudge into squares, serve immediately, or package for gifts.
Notes
- Storage: Keep fudge in an airtight container at room temperature for up to 1 month.
- Freezing: Wrap well in wax paper or tin foil, place in a zip-top bag, and freeze for up to 3 months.
- Stovetop method: Melt chocolate for ganache and vanilla fudge over low heat, stir until 75% melted, remove from heat, rest a few minutes, and stir until smooth if a microwave is not available.
