Description

Delicious Mud Hen Bars are a classic dessert with layers of cookie-like dough, chocolate chips, marshmallows, and a crispy meringue topping. Perfect for any occasion!

Cookies:

  • 1/2 cup butter, room temperature
  • 1 cup granulated sugar
  • 1 teaspoon vanilla
  • 1 whole egg + 2 eggs, separated
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp salt

Topping:

  • 1 cup mini marshmallows
  • 1 cup semi-sweet chocolate chips
  • 1 cup light brown sugar, packed

Instructions

  1. Preheat 350°F: Preheat the oven to 350°F.
  2. Prepare Baking Pan: Lightly spray a 9×13 baking pan with cooking spray.
  3. Mix Cookie Dough: In a large bowl, cream together butter, granulated sugar, 1 whole egg plus 2 yolks, and vanilla until smooth. Add flour, baking powder, and salt; mix until just combined. Spread in the prepared pan.
  4. Add Toppings: Top the dough with chocolate chips and mini marshmallows.
  5. Make Meringue Topping: In a clean mixing bowl with a whisk attachment, beat the 2 remaining egg whites until stiff peaks form. Fold in light brown sugar until combined.
  6. Layer and Bake: Spread the meringue on top of the chocolate chips and marshmallows. Bake for 30-35 minutes until golden brown.
  7. Cool and Serve: Allow to cool completely before cutting into squares.
