Description

This delicious one-pan chicken sausage and orzo dish is a comforting and flavorful meal that is easy to make. The combination of tender orzo pasta, savory chicken sausage, and creamy coconut milk makes for a satisfying meal that the whole family will love.

For the dish:

  • 1 Tablespoon olive oil
  • 1 cup chopped yellow onion
  • 4 cloves garlic, minced
  • 1 12 oz package mild Italian Chicken sausage, 4 sausages, cut into 1” chunks
  • 2 cups dry orzo
  • 4 cups chicken broth or chicken bone broth
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon pepper
  • 1/2 cup canned full-fat coconut milk or heavy cream
  • 1/2 cup freshly grated parmesan
  • 5 oz baby spinach
  • Crushed red pepper for serving (optional)
  • Fresh basil for garnish

Instructions

  1. Cook Aromatics: Heat oil in a skillet, sauté onion and garlic.
  2. Cook Sausage: Add chicken sausage, cook until golden.
  3. Toast Orzo: Add orzo, toast for 1 minute, then add broth, coconut milk, salt, pepper, and Italian seasoning. Simmer for 10-12 minutes.
  4. Finish Dish: Stir in spinach and parmesan until wilted and melted. Serve with extra parmesan, basil, and crushed red pepper.

Notes

  • Store any leftovers in an airtight container in the fridge for up to 4 days.
  • To reheat, warm in a skillet with a splash of broth or water. Alternatively, microwave in 30-second intervals until heated through. For a fresh touch, add spinach and parmesan before serving.
